Sharon, Can I have the recipe for the Portugese Sweet Bread? I would like to try making it on the weekend. thanks Trish

Trish - The recipe that I talked about a few days ago didn't turn out that great. It tasted good but the little birds I made turned out fat, flat and needed WW! Anyway, here's the one from Electric Bread:
PORTUGUESE SWEET BREAD Cal 216 chol 36 mg sod 333 mg protein 12% Carb 62% fat 26% (They don't say how many servings are in a loaf--duuuhhhh!)
Notes: this recipe produces a souply-looking dough. As kneading progresses, the potato flakes will absorb the moisture.
Put crust setting on light. Use rapid or regular cycles
For Large Loaf: 3/4 c lukewarm water 3 c white bread flour 1-1/2 tbsp dry milk (use dry soy milk if possible) 1/3 cup sugar 1-1/2 tsp salt 3 tbsp butter 1/3 c beaten egg (or egg beaters) 3/4 tsp lemon zest fresh 1 tsp vanilla extract pure 1/3 c dried potato flakes 3 tbsp pineapple juice concentrate thawed 1 tsp fast rise yeast OR 1-1/2 tsp active dry yeast
Trish - let me know how it comes out. I've had the real things made with real hands from one of my husband's sisters (they're all Portuguese) and she makes the best, moist, taste sweet bread. The longer it sits, the moister it gets.

Sharon, I want to make one by hand, I don't have a bread maker, I thought I would be able to just do it by hand but if you have one specifically for that way, please post! How are you? haven't talked to you for ages!!! Trish

Trish - my hands are in bad enough shape without NOT using my bread machine. Sorry, but I don't have a hand made one except if you want to use 10 lbs of flour (which I don't think you do). That'll make enough for an army. You should get yourself a bread machine. They're just great. No muss, no fuss and no sore arms and hands afterwards! And, now they're pretty inexpensive. They've got them on sale all the time and you can buy a good one (value $250) for about $99. And, well worth it, too.
I don't think you can use a bread machine recipe to do by hand. The only other way to do it by hand is to let the machine mix and knead and do the first rise. Then take the dough out of the machine, form it into whatever shape you like (I like the little birdies) and then let it rise once more and then bake.
Sorry I couldn't be of more help. BTW, I'm fine. Thx for asking. My gas is fading as we speak!
