Crockpot Chicken Stew (Makes 4 servings)
This is sooo yummy. I used a pre-packaged stew vegetable mix that also included turnips and rutabagas. I actually added way more veggies than the recipe calls for and it still worked out great. This is a great way to get your safe soluble fiber veggies!
1 lb chicken breast, cut in 1 inch cubes 1/3 cup flour 1/2 teaspoon salt 1/4 teaspoon pepper 2 1/2 cups chicken broth (organic or homemade) 1 teaspoon Worcestershire sauce 1 clove garlic, minced 1 bay leaf 1/2 teaspoon paprika 2 carrots, sliced 2 russet potatoes or 4 yukon gold potatoes, diced 1 onion, chopped 2 stalks celery, sliced 1 cup green beans (optional- I omitted)
1. Place cut up chicken in crockpot. 2. Mix flour, salt, pepper, and paprika in a small bowl, and pour over chicken; stir to coat chicken with flour. 3. Add remaining ingredients (except green beans) and mix well. 4. Cover and cook on low for 8-10 hours, or high 4-5 hours. 5. Add green beans (optional) 1 hour before serving.
Note: I think next time I make this I might thicken the sauce by adding cornstarch in a little water about an hour before serving, because I like my stew really thick!

Kree, did you add the prepackaged stew mix in addition to the veggies listed in the recipe? How many veggies were in the mix? Did you also add the turnips and rhutabagas?
was the stew mix frozen or in the produce aisle?
My mom always added green beans to stew, so I think I'll keep it in, at least some!

Hi Augie! I just added the stew veggies in place of what the recipe called for. Unfortunately I don't remember the size of the bag, but it was in the produce aisle near the packages of lettuce and was in a package about the same size as the lettuce. And yes, I did include the turnips and rutabagas. I just took the veggies all out of the bag, chopped them up, and dumped them in the crockpot. I've also made this exactly as stated and I liked it about the same both ways. I've found that crockpots tend to be pretty forgiving!
