Banana and Apple Brown Betty

If you can bear to turn the oven on this time of year...
3/4 cup sugar 1/4 tsp salt 1/2 tsp cinnamon 2 apples, pared and sliced 3 bananas, peeled and sliced 3 cups small bread cubes Butter-flavor cooking spray
Mix sugar, salt and cinnamon together. Combine with sliced apples and bananas.
Spread the bread cubes out in a single layer and spray with butter-flavored cooking spray. In a large preheated skillet sprayed with cooking spray, toast the cubes in batches until lightly browned.
Spray a baking dish with cooking spray. Fill dish with alternate layers of bread cubes and fruit, using bread for the top and bottom layers. Cover with foil and bake at 375 degrees for 30 minutes. Remove cover and bake 15 minutes longer, or until apples are tender. Serves 6.

Thanks so much for this. I've had a yen for Apple Brown Betty for a while now, so as soon as the heat backs off a little, I'm going to give this a try.

YUM. I actually haven't had a brown betty since I was a kid, and definitely not one that had banana in it, but this is really good. Yum. Enjoy, as soon as you're able!

Like I said... we need that devil-horned smiley.
Well, I'm spoiled - my kitchen is an addition on the back of the house, so I can run the oven all summer, and as long as I'm not IN the kitchen, I'm not hot. It doesn't heat up the rest of the house.
