Barley is my new favorite grain!

So I've decided to experiment with my grains now that summer is here, and there are lots of potlucks and bbq's to attend...and this past weekend I tried the following dish, and man oh man was it good...and it was a total hit at the party too! All the ingredients were very fresh and summery! I definitely want to try more dishes with barley now. This makes enough for like 16-20 people, so you may want to half or quarter the recipe.
Barley Salad
4 cups cooked barley (use package directions... basically just boil it in salted water until it's done), drained, rinsed & cooled 1 cup crumbled feta cheese (optional, use soy) 3 or 4 firm ripe tomatoes, chopped (I used multi-colored cherry tomatoes - so pretty and festive!!) 4-5 green onions, sliced Fresh basil, torn into pieces - as much as you like (I use about 3/4 cup loosely packed) Chopped garlic - again, to taste. We love it so I do about 3 cloves. 3/4 cup Extra Virgin olive oil 1/4 cup balsamic vinegar 1/4 cup cider vinegar salt and freshly ground pepper to taste
Combine the barley, feta, tomatoes, onions, basil & garlic, and set aside. Whisk together the oil, vinegars & seasonings. Pour over barley mixture and toss well. Allow to sit for at least an hour or as long as 6 hours before serving - it's fine the next day, too, but it will look a little tired.
