Made this last week, and realised it's probably a pretty safe food:
To serve 2 (or 3 of me...2 was with a greedy man involved) 1 cup macaroni tin of wild mushrooms (or 400g of any mushrooms) 1 sizeable clove garlic 1 tbsp olive oil 1 cup soy milk 2 tbsp plain white flour 1 beef tomato (optional) nutmeg, mustard powder, dried basil, salt, pepper (to flavour your white sauce- take your pick).
*cook macaroni *heat olive oil and fry mushrooms with garlic until they reduce and become tender. Drain excess oil. *heat soy milk to near boiling, simmer and add flour gradually stirring it in. Add seasoning ingredients and stir until white sauce forms a creamy consistency. *line a casserole dish with half of your tomato, sliced. *combine white sauce, mushrooms and pasta and put into casserole dish. Reserve approx 2 tbsp sauce. *put remaining tomato slices on top of casserole and cover with remaining sauce. *cover and bake for 20 minutes.
