I used to make this recipe before I was diagnosed. Made it last evening and it fell apart. Any suggestions?? thanks
Strawberry Bread 1 1/2 cups flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup sugar
1 teaspoon orange extract (I did not have any and used vanilla) 1 1/4 cup fresh strawberries 2 eggs - well beaten (I replaced with 6 tablespoon liquid egg white) 1/2 cup oil (I used cannola)
Mix dry ingredients Beat eggs with oil and orange extract Add berries and liquids
Backe 350 for 1 hour in loaf pan Cool 10 minutes before removing from pan

I suggest leaving the 2 eggs, because there is so little egg in each peice of bread that it is fine. Also, cut down the oil to 1/3 c and replace the rest w/ 3 T of applesauce. Leave the rest alone -- except for the oil, seems like a great recipe to me.

Personally I think you're smart to use Egg Beaters... it's better to be safe than sorry. Heather is against using whole eggs. Plus I'd probably reduce the oil to 1/4 cup and use 1/4 cup applesauce. That's just me. But it looks fantastic!! I plan on trying this very soon.

I made this yesterday and it came out DELICIOUS!!! I'll be making this all the time. I used 1/3cup egg whites in place of the 2 eggs.

Made this yesterday using blueberries instead of strawberries. I also used 1/2c. of egg substitute, and I baked for closer to 90 minutes. YUM!!
