Can anyone help me out here? I've already looked in the index and only one comes up that I even posted.... I've already tried Heather's "Simple white fish with lemon and herbs" from EFI which was yummy.....any other ideas? I don't have a lot of experience with fish!
I only need a recipe or cooking ideas for the fish only, I will serve with rice & veggies.

Yesterday one of the ladies talked about a website recipezaar.com which broke the recipes into different menu ideas. Maybe this will help.

I've never worked this out properly, but it might give you ideas...
Slice some potatoes and par-boil them for 5 minutes. Use them to line the bottom of a casserole dish or roasting pan big enough for 2 fish fillets side by side. Add sliced zucchini, peppers and squashed, but whole gloves of garlic. Mix some dried rosemary and finely chopped garlic with about a T olive oil (I guess you could leave it oil out) and rub into the fish fillets. Lay them on top of the veg. Add a can of chopped tinned tomatoes and bake for about 20 minutes.

I put it in a pouch with some tomato sauce that I like (it was an eggplant/tomato sauce) last time I made halibut....
it would also work like I made trout Mon night:
sautee some raw spinach in vegetable broth with some spices in a deep skillet- I added some lemon juice and herbs to taste... place fish on top of the spinach, and cover pan, leave sit for about 10 minutes- will poach the fish... works with any fish, serve over rice or noodles... I used rice.

Thabks for the spinach idea! I added some zucchini and sweet pepper and garlic before the spinach, but this was such a good idea! It'd never occured to me that you could cook fish this way.

I had some garlic and onion powder in mine, and some other spices, but we didn't have other veggies in the house at the moment to use... worked well though.

I will try to remember to get it out tomorrow. It is super easy to do and post! But I can't get it now. Sorry!  It is a simple marinade with a soy sauce base and then grilled. I'll fetch it soon I promise.
