Hi folks, Easter is around the corner and I just finished making my Easter eggs for my family and friends. So here's wishing you all a very Happy Easter. Before I go on my Easter hols. I would like to share this recipe with you. I made this some years ago and it won a prize.
Two cups of long grain rice. (Boil the rice in salt water. When cooked drain the water. Divide the rice into three equal parts.
1st Part - Red Mix the rice with 3 table spoons of Tomato Ketchup and 1/4 lb. cooked ham (cut up.)
2nd part - Green Mix the rice with some of the following green chutney.
Blend or grind to a paste the following: a bunch of corriander leave, 1/2 fresh coconut (grated), 6 green chillies, 1/2 teaspoon cumin seeds (or powder), a clove of garlic, 1 tea spoon sugar, a little tamarind water and salt to taste. Add a few drops of green colouring (optional).
3rd part - Yellow Mix the rice with the following: Cook one cup shelled shrimps with the juice of 1/2 a coconut and 1/2 teaspoon tumeric powder (a few drops of yellow colouring - optional).
Method: Grease a medium size transparent baking dish with butter. First put the red layer of rice. Spread evenly and press down on all sides.
Next place the green rice on top - pressing down and all around well. Last of all add the yellow rice - once again firmly pressing the rice down. Cover with foil and seal.
Place dish in a larger pan containing hot water and steam for about 20 minutes
When ready decorate with 3 hard boiled chopped eggs and parsley.
Note: In the red rice you can add cooked kidney, chicken, beef or mutton.
