This is not really a recipe but well I guess it is but a very easy one. Take 4 mahi mahi fillets (I get the frozen bags at Sam's Club) and dip in 1T. Chef Paul Prudhomme's redfish magic and place in a very hot cast irom pan with a little oil. Turn on a fan. Cook on high heat for about 4-5 minutes per side. Make sure it is good and dark before turning. Serve with mango salsa if possible or some other prepared sauce. It is a really delicious way to make fish!

I made this again tonight but the strange thing is that the spice bottle was unopened and I know I made it before! Nevertheless it was very good and tasted just like last time.
