yummy in a crockpot meal... easy to put together the night before or in the AM and then cook while at work...
cook in crock on low or warm... (for at least 7 hours)
chicken breasts (I normally do at least a pound, sometimes 2 or 3 since they get devoured)
(mix sauce and taste, then add chicken to crock) 1 12 oz can tomato paste 2 tablespoons mollasses (or more to taste) big squirt of honey (more if you like it sweet, less if you like it not so sweet- like us..) onion powder garlic powder chili powder (other hot pepper powder to taste - I use a small amount of chipotle to give it smoky flavor without a lot of heat)
(you can vary spices and flavors to taste- sugar works as a sweetener too, and if you don't like the mollasses taste- leave it out or use less)
1.5 cups water (more if needed to cover chicken completely once the chicken is added to sauce.
put lid on and cook. Immediately before serving pull the chicken pieces out and shred- you can use a fork, or put on a plate and use a spoon- it will just squish apart with a wooden spoon if its been cooked long enough! add back enough sauce to make it mildly soupy... store rest of sauce to use as BBQ on side or to use with something else (I often freeze it and defrost to put on chicken ont he grill later)

on a roll, on thick slived toast, with potato, with rice, with mini pita's to stuff the pockets of...
my husband prefers it on a roll, but if he really gets pulled off the carbs- I'll probably make his with just vegetables.

I just printed a bunch of your recipes too! I needed some more to make and more variety... and some are things I think will work for DH if he winds up on a low carb diet.. not no carb, and not high fat.. due to his health issues- his meeting with the specialist is at 3:30 today...

OK, everything is in the crockpot in the fridge... just waiting until I get back from the gym (or noon, which ever comes 1st) to start it cooking.... I'm so excited to try this one!! I PLAN to serve it on rolls and also have baked lays and maybe some veg baked beans!! Oh, and I'm buying Beano today for both the baked beans and Bevrs Lentil Soup that I plan to make next weekend. I was going to make it this Sunday but then realized there will be plenty of Amie's Pull Chicken for two if not three nights!!

The only times I don't have leftovers is when there are a bunch of big guys over and I normally only doat least a pound at a time.. sometimes I do like 2 or 3

I have 2.14 pounds (6 breasts) in there....and only Shane & I are eating it.... so, there SHOULD be a total of 6 serving.

depending on how much per sandwich (how much bread/rolls) you are eating in comparison- maybe more.. when its 2/3 of us I normally do 1.5-2 pounds, when its the crew I do 3 or more...

SHELL's REVIEW : YUMMERS!! This turned out soooo good!! We will have leftovers tonight and more then likely Monday too!! It's great cuz I just removed 2 breast and left the other 4 in the sauce and added some more chipotle and a little sugar....and just put the crockpot(removable pan) back in the fridge.... I'll just put it back on low for a few hours this afternoon, and the same thing on Monday before I go to the gym.... (2-1/2 hours should be fine...) And SO easy to make too!!

I do it to my taste and he adds some pepper at the table- pepper flakes or chipotle or habanero powders...
glad you liked it, I normally just nuke the leftovers because the crock takes up too much space in the fridge and on the counter, but we don't normally have a lot left... since I mostly make it when Bill's friends are over.. we can't wait to try a few of your recipes soon Shell.. I got Bill's go ahead on 3 of them for this week or next..

If I only cook one pound of chicken, can I just cut the sauce recipe in half? I don't want left overs of the sauce because I know I won't use it. How much sauce do you usually use per serving?
Also, if I am only having one serving and freezing the other 3, should shred the chicken and and the sauce before I freeze it....or when I am ready to defrost and eat it? Should I freeze the cooked chicken separate from the sauce in this case?

I'd just shred it all and then freeze in portions mixed with the sauce.. and leftover works well as BBQ or you could cut the portions- its all to taste anyway...

you could leave it whole, but by pulling it apart (it does it almost on its own) it makes for sloppy joe type sandwiches- big hits with kids.. and is like old fashioned BBQ that people down south used to do and oh so yummy! also fewer breasts feed more that way!

discovered I have no idea how much onion powder or garlic powder to use! I am so bummed! Now I probably just freeze the chicken and try it for next weekend hoping maybe you can answer my question,,,,pretty please!
About how many tsps of each powder do you use per the sauce recipe? I know it says "to taste", but I'm bad at winging it and do better with measurements.

I've only made this once -- it was really good. I did have to make adjustments -- when I first tasted it, it wasn't that great. So net measurements are approximations. You might want to start out with half the amount of spices and add the rest later if you feel something lacking. It's easy enough to add more but you can't take anything back out! I was also pretty sure I had added pepper, but I don't have that in my notes.
used around 2 lbs chicken breasts used same amount of paste (12 oz) used dark molasses -- 3 T about 2 T honey 1 T onion powder 1 T garlic powder 1 T mild chili powder 2 T vinegar 1 T brown sugar several drops liquid smoke (if you do have chipotle, use that instead - I never remember to buy it)
didn't measure the water -- just kept pouring it in until it covered the chicken. I let it cook down and shredded the chicken right there in the crock pot and mixed everything up -- no extra sauce.

How many tsp of the onion and garlic powder did you use.
If I used 1 T, that would equal 16 garlic cloves (the bottle said 1/8 tsp=1 clove).

I honestly don't measure, but I handle a lot of both and love them... so I don't put amounts down because others can't handle the quantities.. I have used a whole head of roasted garlic on more then one occasion in it! so I am not one to tell I shake a ton- probably at least i T or maybe evne 2 of each...

You don't need to use that much garlic if it makes you nervous. Plus, you said you'd be using 1 lb chicken and mine was 2 lbs (probably closer to 2.5, actually), so even if you went by what I used that'd still only be 1/2 T.
Amie posted the spices "to taste" for exactly that reason -- people have different ideas of what's tolerable and what tastes good! If you don't do well with onion and garlic, either skip it entirely or start out very small, like 1/4 teaspoon. If you taste it later and think it's missing something, add another 1/4 teaspoon.
also I should note that I buy ultra-cheap garlic powder (it's literally like fifty cents for a big shaker) and I've found it's a lot less potent than the real garlic equivalent. If I were using real garlic cloves, I would probably use 4-6 cloves instead of 1 T powder. I love garlic but my GERD/IBS can't handle a lot of it.

I was looking back at an old post of mine from 2005, and noticed a link to this one. I can't wait for my kitchen porject to be done..... I want to make this over the weekend...but the crockpot is already packed...dang it!! LOL
