I don't think this one has been posted yet, I had some of this from a catering company at a local open house... it was YUMMY! Artichoke Hummus Servings 8 Ingredients: 1 (15 oz. can) garbanzo beans 1/2 cup canned artichoke hearts 2 cloves garlic, minced 1/4 teaspoon lemon juice 1/4 teaspoon each salt and pepper 2 tablespoons olive oil Pita bread wedges or crackers for dipping
Directions: In bowl of food processor, combine garbanzo beans, artichoke hearts, garlic, lemon juice, salt and pepper. Process until mixture is smooth. Lightly drizzle olive oil into bean mixture. Process until combined. Cover and chill hummus for 1 hour to allow flavors to blend. Serve with pita wedges or crackers.
For Pita Bread Wedges - Cut pita bread into wedges. Brush bread with olive oil or spray with cooking spray like Pam. Bake in a 400°F oven for 10-12 minutes or until lightly crisp.

This does sound yummy. My husband is the designated hummus maker in the family - even as I write, he's got an broiled eggplant cooling on the counter so he can make Heather's Smoky Eggplant Hummus for lunch tomorrow - so I'm going to sweet talk him into making this for me soon.

I made this yesterday and while it is good, I was wondering how do you get it to be really smooth. Mine still has somewhat of a gritty texture to it. A friend of mine said that in orginal hummus tahini(sp?) is used and that makes it smoother. Is that IBS safe? I did use some of the liquid from the beans to try and smooth it out more. Any suggestions???
