I just noticed a recipe with bleu cheese in it. IS BLEU CHEESE OK??? You mean I could be eating it? or is this a false hope? Is there any such thing as a somewhat SAFE cheese? I miss it the most....

Yeah, I miss cheese, too. I'm just starting the IBS diet and when I look back, almost all my previous recipes contained cheese!!

Cos all dairy cheeses are NOT safe, including those made with goat's milk, etc. I miss it too.

Oh yeah I know what you mean... Cheese was by far the hardest thing for me to give up. I didn't really eat any dairy at all except for cheese. Some of the soy cheese brands aren't too bad, not so great to just munch on and most don't melt well though. Good in sandwiches and stuff mostly. Actually I once found a brand of rice cheese that tasted so close, it was good to just munch on and my family didn't even know it wasn't real! I haven't been able to find it again though
I agree with Linz though - it's not safe. Sigh... *goes off to dream of macaroni and real melted cheddar...*
