Need some recipes

I'm hosting a Shabbat meal this week and I'm making everyone cook an IBS-safe food item. Unfortunately, most of the items here are too time consuming for my friends (college, all of them) to make. Can anyone suggest simple sides/desserts/salads?

AmandaPanda's Syrian Potato Salad is pretty easy: Syrian Potato Salad I make it for most of my frat dinners and everyone loves it.
Any of the muffin recipes might be an easy dessert, or if they can get to Trader Joe's or even Fresh Grocer has No Pudge brownie mix, which is really simple. I use applesauce and vanilla extract instead of the yogurt suggested in the directions. Some of the pasta dishes might work too, like Lemon Pepper Pasta .

I'm definitely not much of a cook, but I thought the Peppermint Fudge Cake was astonishingly easy -- and it's completely non-dairy.
I had to buy the peppermint extract and cornstarch, but the rest was easy.

I would cut the 1 Tablespoon of peppermint extract down a bit though.

The No Pudge would be good, except that the meal is fleishig (meat) and the mix is dairy. So no can do.
I'll take a look at the other stuff, though. Thanks!

What do you mean by dairy? There's no dairy in the mix, and if you make it with applesauce and not yogurt, there's no dairy in it....sorry, I'm just confused...

Under kosher rules, the mix is considered dairy (look on the front of the package; you'll see a U in a circle and a letter D next to it. This means it's dairy).

Anything with potatoes. Baked, roasted, whatever. Lets see: baked apples for dessert (do a search on the recipe index for how to make it). Instead of buying a gefilte fish loaf or the canned stuff, you can make salmon. Add a bit of olive oil, lemon juice, garlic powder, and dill (optional) and bake for like 15-20 mins. I'll keep thinking for ya! Hatzlacha Raba! P.S. How'd your survey go?!

Avidan - how about fruit noodle pudding (kugel), diary-free vegan fudge, or just "plain" angel food cake.(those are in the recipe index)..or from the New York Times Jewish Cookbook Choco-Orange Ice, Apple Compote, Bananas in Ginger Syrup, or Chocolate Chewies - all pareve. If any sound appealing..let me know and I will copy it.
