Ideas for ripe bananas.

Anybody has fun recipes for ripe bananas? My family is getting tired of the same ole same ole banana bread. Also has anyone tried apple butter instead of butter when making banana bread?

I use apple butter in place of butter for all my sweet baked goods. I used it in chocolate chip cookies, cut down on the sugar though as the apple butter is sweet.

You can freeze them in pieces. When you are hungry for ice cream, just pop some in the blender and mix until creamy! Yum, just like ice cream!

Hi, Since bananas are about the only fruit seems I can eat I like to fix in different ways my banana recipes: Easy banana pudding Mash a banana well in a cereal bowl then slightly stir Tastes like a pudding - and fast to make!
Hot banana pudding Spray skillet with spray oil Add sliced banana sprinkle with cinnamon cook on med. heat and stir constantly add a teaspoon of (drizzled it) honey or brown sugar cooked it will be hot + mushy-still some sliced banana shape ready to eat!
Banana ice cream 1 sliced frozen banana 1/2 cup vanilla soy milk blend in blender **different flavors added - 1/4 tsp. cinnamon or molasses Frozen fruit cupcakes haven't tried this one yet make banana smoothies pour into cupcake pan lined with cupcake papers freeze until firm (about 3 hours) peel off paper from frozen dessert. let stand at room temp. 10-15 mins. to soften -easier to eat

Grandma's Banana Bread Yield: one loaf
4 Tbsp. butter, softened (I'd use apple butter or apple sauce to replace the butter) 3/4 cup Grandma's Molasses 1/4 cup sugar 11/4 cup flour 1/2 tsp. salt 1/2 tsp. baking soda 2 eggs (I'd use 3 egg whites, or an egg replacement product) 3 large ripe bananas, mashed 1/2 cup each chopped nuts and chocolate chips (optional) 1/2 tsp. each fine orange zest and nutmeg (optional)
Heat oven to 350ºF. Cream butter, molasses and sugar. Whisk together flour, salt and baking soda. Combine with butter mixture until consistency resembles brown sugar. Beat in eggs. Fold in remaining ingredients. Pour into greased loaf pan. Bake 50-60 minutes. Cool.

I haven't tried it yet but it seemes good.
Bananamarmelade 2 lemons (zest and juice) 4,410 pound banana 2,205 pound sugar (with pektin if you can find it) 1-2 tsp minced ginger
Peel and cut the bananas into smaller bits. Put bananas and lemonjuice in a pot and boil. Add the sugar and simmer for 2 minutes. Put the pot aside and take off the foam. Let it rest 5 minutes and and the lemon zest and the ginger. Put the marmelade in really clean yars and keep in the fridge.

I think those quantities got scrambled - maybe in a conversion from metric to pounds? Maybe it's supposed to be 4 pounds bananas and 2 pounds sugar? Otherwise this would make a lifetime supply of marmalade!

I believe in most of europe (except here in the UK) one uses a comma instead of a dot (period) to represent the decimal point. So when you read 4,410 pound banana I would write that as 4.410 Of course when dealing in pounds it's not usual to talk about quantities less than a pound as a decimal but to use ounces.
