Chicken & Pinapple Salad

Hi, I hadn't tried this yet.
sauce
2 Tb. sugar
1 Tb constarch
1/2 t salt
1/4 cup pineapple juice
1/4 cup chicken broth
2 Tb plus 1-1/2 t white vinegar
1 Tb reduced sodium soy sauce
1 t canola oil
Salad
1 pound boneless skinless chicken breats, cut into 1/2 inch strips
2 t reduced sodium soy sauce
1/2 t finely cropped fresh gingerroot or 1/8 t ground ginger
2 t canola oil
1 medium cucumber, quartered, seeded and thinly sliced
1 large red onion, quartered & thinly sliced
1 celery rib, sliced
lettuce leaves, optioal
5 pinapple slices, halved
2 Tb sesame seeds, toasted
in a sauce pan, combine first 8 items, until smooth. Bring to boil, cook and stir for 2 minutes or until thickened. cover and refrigerate.
I n a large bowl toss chicken with soy sauce and ginger. saute chicken until so longer pink. remove from heat and allow to cool. Combine the cuc, onion, celery, and chicken. Pour chilled auce over chicken , toss to coat. arrange chicken salad and pinapple over lettuce and sprinkle with sesame seeds.
This could be eaten as a side dish with your soliables. I think I will cut the oil to cook the chicken in.
1 cup equals 220 calories, 6 g fat much less if some oil is cut out.
