Thanks, I'd like to make this today since my taste buds are finally starting to work again after a terrible cold for the past week but my gut is still quite touchy and I'm sure the vit C in the lemon will be good for me.
It feels wonderful to be starting to be able to appreciate the simple tastes of IBS-safe food again....it felt like I was eating sawdust for past week until today!

"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!

If I'm not mistaken, the recipe calls for asian type sushi rice, not regular american long grain white rice. The short-grain sushi rice is starchier and I think that's important for the pudding. I don't think the brown rice will behave the same way. Not sure though.

I haven't had brown rice in so long that I'm not even sure I can remember exactly what it tastes like, but I'm thinking the flavor would be too strong for the pudding. Really, though, I'm with Amanda on this one - I think the texture is what would do it in. You want the starchiness of sushi rice to make it creamier.
