Christmas Fruit Loaf

2 cups all purpose flour
3/4 cup granulated sugar
3 1/2 tsp magic baking powder
3/4 tsp. salt
1/4 diced candied pineapple
1/2 cup raisins
1/2 cup chopped glazed cherries
4 egg whites
1 cup soy milk
1/4 cup cooking oil
Mix together first 7 ingredients in a large bowl. Break eggs ina smaller bowl. Beat until frothy. Mix in soy milk and oil. Add to the large bowl and stir just to moisten.
Pour in a greased 9X5X3 inch loaf pan. Bake 350 for 1 hour (mine took 1 hr and 15 minutes).
Let cool in pan ten minutes then remove.
Enjoy!
I truly miss cookies at Christmastime, so I bake cakes and loaves to my hearts content. This loaf is sweet enough to be a cake. It only required changes to the milk and eggs. It freezes well.

Thanks for this recipe, I'm the only one in my family that eats Christmas fruit cake so now I can really enjoy eating it without guilt and pain ( my mother in law would give me a half a loaf). I just might make this tomorrow. thanks again. take care. (by the way I love your new photo) Sue

I bookmarked this one and then forgot about it. I'm right in the middle of my last-minute holiday baking, so the timing is perfect! Guess what I'm making tonight? I'll be sure to let you know what I think of it, but it sounds fantastic!
