Cinnamon and Lime Chicken Fajitas (Makes 6 servings)
These look very tasty and very safe!
INGREDIENTS: 4 boneless, skinless chicken breast halves 1 tablespoon ground cinnamon salt and pepper to taste 2 large baking potatoes, peeled and cubed 1/4 cup canola oil (I'm sure you could use less) 1 large yellow onion, chopped 1 large clove garlic, peeled and minced 1 tablespoon chopped jalapeno peppers (I would omit this... yuck!) 1 lime, juiced 12 (6 inch) corn tortillas, warmed
DIRECTIONS: Preheat oven to 400 degrees F (200 degrees C). Place potatoes in a shallow baking dish. Drizzle with about 1/2 the oil, and season with salt. Bake 30 to 40 minutes in the preheated oven, until tender. Meanwhile, season chicken with cinnamon, salt, and pepper. Arrange in a separate baking dish, and bake 30 minutes in the preheated oven, until no longer pink and juices run clear. Cool and shred. Heat remaining oil in a skillet over medium heat, and saute onion and garlic until tender. Mix in shredded chicken, jalapeno, and lime juice. Cook until heated through. Serve the chicken and potatoes in warmed tortillas.

... I love them. Are you just omitting them because you don't like the flavor, or should I be careful? (I know to be careful with all veggies, but as far as I know spiciness is not a problem ... am I right?) Thanks, Panda

The *flavor* is excellent. I mean, REALLY good... and we omitted the jalapeno... I think it would be terrific with a shot of Tabasco or a sprinkle of cayenne to make up for it if you omit the jalapeno, but it tasted good without.
BUT - it's wicked dry. I don't know if that's because we halved the oil, or what. We ended up not eating it in tortillas (or lavash, in our case) because the additional bread just made it SO dry that it was almost difficult to swallow. LOL! It worked really well without the tortilla. Rachel thinks she's going to try it at home, adding chopped mushrooms, tomatoes, and green peppers for added moisture.
So uh... that's our review. Would I make it again? Sure! But I'd skip the tortillas.

The chicken itself was quite tender, I should have clarified that. It was the mixture over all that was dry - and it wasn't too dry to eat on a plate, it was just too dry to roll up in something bready.

I live in Texas and we put guacamole or salsa on just about anything in a tortilla. That might make it a little less dry. The recipe looks yummy...worth playing around with.

...that I figured it out: when you get fajitas in a restaurant, they come with cheese, salsa, and sour cream to put on top, and *that's* where the moisture comes from. Duh. A good mango or similarly tropical/fruity salsa would be *excellent* on these!
