I was going to bake them- don't have a recipe perse- but nothing in moms isn't safe except the egg yolk and the frying.. so just going to use egg white and bake instead of fry... though I was thinking about maybe trying cooking spray on my griddle instead of the baking possibly too.. been going back and forth on that....
she just uses potatos (or zuchinni with some potato), small amount of diced onion, garlic, varied herbs and spices depending on flavor needed and 1 egg.

I always found it was the oil that held the grated potatoes together, but perhaps I'm wrong. Thanks. I'll try baking them this year and use egg beater instead of eggs.

How long do you think they should bake for?
My DH is LOL. He sais the only thing wierder than my typing in a question at 4 AM is that there was actualy someone awake to answer it.

I start work at 5... so am online before and around then- check messages, and then tend to do other things until later because the boards are so quiet at that hour....
and umm.. as to oil holding them together- they need to cook for the egg to hold them together... oil normally serves that purpose, but it does work.. doesn't even take a lot of egg... I figure we'll see.. you definitely need nonstick spray to keep them from sticking though.... I've been trying to replace my chocolate/jelly filled suvganiot recipe... that is proving harder... I can bake donuts- tried, but don't have the donut pan... and can't figure out how to put a filling in them... ah well.. the worse part is I will have to make fried sufganiot for fri night anyway because I am the one who always brings them- chocolate, peanut butter and jelly filled to our havurah party and was already asked 3 times if I ws doing so...

Use a medcine seringe dropper to squirt the filling in. I know how you feel. I had to make cup cakes and brownies for a bridal shower yesterday, and even though I'm a big fan of ADBs regular people want real brownies so I had to bake what I could not eat. I'm making Chanukah dinner Friday night so I get to choose the menu this year! Chany

thats the problem- the ones in the skillet - at least the ones we grew up on are all deep fried as in skillet deep in oil... too much oil and fat for my stomach to handle...

It's funny you brought this up because I just got and email from Weight Watchers and the recipe part had these potato pancakes and I almost went to post the recipe here and then decided maybe not - but since you asked I guess I will!
Chanukah Potato Pancakes
POINTSŪ Value ' 3 Servings ' 5 Preparation Time ' 5 min Cooking Time ' 7 min Level of Difficulty ' Easy
Ingredients
1 1/4 pound potato(es), peeled and shredded 2 medium egg white(s) 3 Tbsp all-purpose flour 2 medium scallion(s), minced 3/4 tsp table salt 4 tsp vegetable oil
Instructions
Soak the potatoes in cold water 30 minutes; drain and blot dry. Preheat the oven to 375° F.
In a medium bowl, combine the potatoes, egg whites, flour, scallions and salt. Form into 12 pancakes.
In a large nonstick skillet over medium heat, heat one third of the oil. Cook the pancakes, 4 at a time, until just golden, about 2 minutes on each side; transfer to a baking sheet. Repeat with the remaining oil and pancakes. Bake until crisp and cooked through, 5-7 minutes.
