PUMPKIN CAKE W/NORMAL INGREDIENTS

I'm baaaaacccckkkk! Here's a great cake recipe I made yesterday and, boy, is it moist even w/out frosting.
PUMPKIN CAKE
1 pkg white or yellow cake mix 2 eggs, or 2 egg beaters, or 4 egg whites 1/4 c water 2 tsp baking soda 1 can 16 oz. pumpkin 2 tsp cinnamon 1 tsp nutmeg confectioners' sugar
Heat oven to 350. Grease/flour bundt (12 c) pan or baking pan 13x9x2". (I used spray butter flavor Pam)
In lg. mixing bowl, blend all ingredients EXCEPT CONFECTIONERS' SUGAR. Beat 4 min at med speed with electric mixer. Pour batter in pan. Bake 40-45 min or until cake tester comes out clean. Cool 10 min on rack and remove from pan. Sprinkle with confectioners sugar or leave plain.
It's great without any frosting or sugar on top. It's unbelievably moist.

I always get excited when I see you have posted yet another yummy sounding recipe. I am sad like that though when I could talk about food and baking all day long. Just think of how my poor friends feel sometimes!

Ok for us Aussies on here what is white or yellow cake mix???? thanks!

They come in a box and you add eggs and oil, mix it up and bake it. Yellow and or white cakes are more like, I guess, a vanilla cake. I think white cakes are made with egg whites, but I'm not positve. It is a quick way to make cakes.

I made this for Thanksgiving instead of a pumpkin pie, and all I can say is YUM. It's very moist, and yet light, and really good even without icing. Thanks Sharon!

I used a 15 oz can of pumpkin this time (store was out of 16 oz cans), and it turned out perfect, and on time! Last time I used the 16 oz and it was a little 'too' mushy, but was still really got and edible, but it also took about 20 minutes longer. having less pumpking did make it taste more like cake with pumpkin than pumpkin cake, though... but still yum! i will definately be making this again!

I have made this for 2 parties now and it is great. I either put soy cream cheese frosting on it or just frost 3/4 with bad frosting for everyone else. One thing I forgot the first time is to check the cake mix and get one that is dairy free- not the pudding in the mix kind! Anyway this is a foolproof cake to bring to parties.

I took the cake to a class that I teach and the women went bonkers over the cake. It was an absolute hit. I didn't frost mine, just sprinkled a little powdered sugar on top. AWESOME!

I love this cake. I have made it many times. I always wonder about frosting for it. This worked today and looked very fancy: take 1 container plain soy cream cheese 1/2 stick DF margarine 1t maple extract or so 1t cinnamon or more about 1/2 bag powdered sugar 1T or so of rice milk if needed Mix and chill
Dairy free frosting is usually too runny to frost the cake with. Try cutting the cake, putting in a serving dish and then drizzling the gooey frosting on top. It looks better than a frosted cake. It seems like it is from a restaurant.
