Yogurt Pound Cake With Lemon

2/3 c sugar
1/2 c oil - can use half applesauce/half oil
3 egg whites
1 t vanilla
2 T lemon peel, grated
2 1/2 c flour
3/4 t baking soda
1 c nonfat vanilla soy yogurt
Glaze:
juice of 1 lemon
3 T sugar
Cream together sugar and oil. Add egg whites, beating for 4 minutes or until well blended. Add vanilla and lemon peel. Add flour alternately with yogurt to creamed mixture. Begin and end with dry ingredients. Pour into
8 1/2 x4 1/2 x 3-inch glass loaf pan. Bake at 335 (original says 337 ?) for 55-60 minutes. (if baking in a metal loaf pan raise oven temperature to 350). Glaze: Bring lemon juice and sugar to a boil in a small saucepan. Stir constantly until slightly thickened. Brush top and sides of cake. Best if done right when cakes comes out of the oven.

Looks great! Just a couple of comments. You'd want to replace the yogurt with soy yogurt, since dairy is a no no. You also might want to replace half the oil with applesauce to lower the fat content.

Yes... I WILL be trying this one. Yum! I second Kree's comments about it; as soon as I try it, I'll let ya know how it came out with the modifications.
A quick question, though - is 337 the correct oven temp for glass pans? (I'll actually be using a metal pan, but I figured I'd better ask!)

Morning Casey:-) I looked at this too with a laugh! I just copied it from the recipe I had. I totally forgot to change the yogurt to "soy" etc...I will go back and edit - thanx guys. I love pound cake - and all the recipes I have come across usually have so much fat..that is why I thought this one would be perfect. YUM!
