I want fluffy pancakes!!!!!!

I hope someone can help me. I made Heather's banana-ornmeal pancakes and did not like tham--they turned out flat and almost seemed uncooked on the inside. Anway I decided to re-do my favorite recipe for pancakes--the only thing I had to change was egg whites instead of whole eggs and soy milk for the regular milk. They came out flat and uncooked in the middle (not really uncooked but sort of mushy instead of fluffy). What is wrong????? Im very disappointed. Here's the recipe I used. 4 egg whites 2 1/2 c soy milk 1 t baking powder 2 1/2 c flour 2 T sugar 1 T oil 1 T baking powder 1t salt 1/2 t vanilla

I have to be totally honest, I have no idea why that wouldn't have worked. Hmm. I hope someone comes along who can really answer your question!
I make pancakes with no milk and no eggs (do a search here for "orange juice pancakes") and they come out nice and fluffy. Maybe try those?

turn the heat down. Cook on low-med heat. Also when you put the batter in the pan wiggle it around a little and experiment on size. Also do not whip the batter too much, try to fold instead of stir. I hope this helps.

I always sub the milk for soda water or a carbonated, non-flavored, sparkling mineral water. Don't worry, the carbonation is gone by the time the pancakes are cooked. It's a trick I read about years ago and have been using ever since.
Or, you may try whisking the egg whites until they are foamy then fold the rest of the ingredients (combined first) into the egg whites.

and both times, my batter is way to watery and they ooze all over the place. What am I doing wrong?? Or should I add more flour?

I would say add more flour. I usually end up adding flour to pancakes until they reach the consistency I like. It's all a matter of trial and error! And believe me, I've had the errors! Lol.

1. Your baking powder is probably dead. Ignore the date on the can, throw it out, buy a new can. 2. Try using half soy milk and half ginger ale (for pancakes or waffles).
