French Toast 1 1/2 c. soy milk 2 tbsp. flour 1 tsp. sugar 1 tbsp. yeast 1 tsp. cinnamon 1 tbsp. canola oil 4- 6 thick slices french bread Mix soy, flour, yeast, sugar, cinnamon with whisk briskly. Pour in shallow bowl. Heat oil in pan. Dip bread in mix and coat each side. Fry each side til crispy and brown. About 5-7min. Remove from pan and keep warm while cooking remaining bread. Serve with syrup. Serves 2
Waffles ( if you can handle whole wheat flour) 1/2 c. white flour 1/2 c. whole wheat 1 c. soy milk 1/2 c. applesauce 1/2 tsp. cinnamon 2 tbsp. baking powder Mix dry ingredients. Add milk, applesauce. Pour in oiled waffle iron. Cook til golden brown. ( You can make pancakes too just add more soy) Serves two

Angel, this recipe sounds really neat! Does the yeast just flavor the French toast? I've never seen a recipe like that before. I'm going to have to try this.
For the pancake recipe, if someone can't tolerate any whole wheat flour at all, they could probably just sub an equivalent amount of white flour. I've done that with a wide range of recipes and it always works out!

The yeast adds some flavor. Using white flour instead of whole wheat does work out great.

You cut it in thick slices.

with the bread being so thick, does it cook well and get coated with the mixture all right?

It's doesn't have to be that thick just 1 inch thick is fine.
