As far as the gluten goes, I'm just figuring it all out right now. I haven't had a positive celiac test, but it's my understanding that some people may not have celiac but still can't tolerate the gluten (allergies or intolerance). I haven't had too much gluten in about 2 weeks, but I had some Quorn nuggets today and they were breaded (I was soooo hungry I would have eaten anything!). It took about an hour before I got some sharp abdominal pains and some bloating and gas. I don't know that it was the breading for sure, 'cause that's the first time I experimented at all. Sometimes if I've gone too long without eating I get the same symptoms when I put food in the system. I'm going to go gluten free again for a few days and try some bread on Friday (in case I get sick, I'd rather test on the weekend!).
Anyway, all I know is that my bloating and gas and discomfort greatly decreased after giving up all things gluten. I cannot say for sure that there's a connection 'til I "test" some more. (I also have an appt. with my gastro tomorrow, so we'll see what he has to say)
