Bread Machine

I've bought a bread machine and have used it once so far. I did have a quick question regarding the recipe book that came with it. For making traditional which bread it calls for dry milk. Since I avoid dairy, is there a replacement for this or can it be left out? It also says to use bread flour. Has anyone found this makes the bread better or can I use unbleached flour instead? Thanks for any help.

I have read some where that you can leave the dry milk out and it won't make a differance. But you have to use bread flour. Pillsbury makes a good one it even says for bread machines on the bag. Good luck.

If the original recipe calls for water and dry milk, you can substitute soy/almond/rice milk. Or plain water.

I've used regular ol' white flour in my bread machine and it seems to work fine. I find the bread flour makes denser bread, and I prefer lighter bread. I think bread flour has a higher gluten content.
