So my Aunt and Uncle have taken my boyfriend and I out plenty of times...so I decided to make dinner for them this time. (which, as all of you know, is actually sometimes easier than going out!) So, I just finished making the peppermint fudge cake and it smells soooo good! We are having orange rosemary chicken (my fav!), roasted potatoes, and green beans with almonds...I have a basket of rolls out already! I'm so excited:) I spent 3 hrs cleaning my apartment this morning and it looks fabulous!!! Isn't it nice when you feel well and can accomplish so much? It's so wonderful! Well, I'll let you know how it goes...but I am SO glad to have IBS safe recipes!!:)

It's the easiest thing in the world... just season chicken with salt and pepper...then throw in some roasemary. poach it in the orange juice for about 20 min...you can even add flour to the sauce and make it thick. I got it from one of the GF cookbooks...it's delicious...and with white rice as SF, it's fabulous:)Well, I gotta check on it! have a great night
