And because it ended up looking so realistic, I DID take a picture of it!!! Only now I can't find it. I'll have to look some more. It actually did taste good. I bet you could make it IBS-safe -- Jell-O vanilla pudding is safe, and I've found safe white cake mixes before. Not sure about spice cake, though. The hardest part would be the sandwich cookies, but you could just use something like crushed sugar cookies or vanilla wafers (not Nilla wafers, which are not safe!).
I made this for a Halloween potluck at work. Most people wouldn't eat it because it looked TOO realistic.
