That's no where near enough calories, you know? Below 1500 is not healthy at all...you are periously close to starving yourself!!! No wonder you have major bloat with that little SF in your day. I have to snack ALOT to keep my tum from going haywire.

Middle of the night snack - Glass soy milk. Corn thin & jelly.
B - Instant oatmeal, Acacia, honey, banana. Rooibos with soy milk. Glass fruit juice.
L - Tuna mayo noodles.
S - Tangerine. 2 crackers. 4 corn thins with PB & jelly (I felt sick and needed sugar ).
D - Shrimp risotto. Glass of white wine.
Total calories 2365. BMR + Lifestyle - 500 = 2214...
...so I was 151 cals over. But I thought it was going to be way worse after the PB & jelly fiasco. And my protein intake was 18%.

I am definatly wearing myself out...but I caught up on sleep tonight by taking a benedrill and that was the first night that I have slept in past 8:00 in a loooong time!!! It felt nice!
Breakfast: Chrysanthemum tea and Shredded Wheat Cereal
Lunch: PB Sandwich with a pear and Pinneapple with UFO and carrots
Dinner: Rice with Veggies and Furikake
Snack: Healthy Choice Teriyaki Chicken Meal, and a popsickle to help with the blistering heat!
Excersize: Played Tennis after school and had to walk down to the park so that's about 3 miles plus crunches in the morning and yoga

I notice you eat a lot of beets. Are they canned, frozen, fresh? What do you put on them and how do you prepare them? I don't think I've ever had a beet.

Oh yeah I love my beets Mostly I buy them canned because they are so easy and convenient - already cooked (enough for me anyway) so I basically just open them and eat. They're so flavourful you can really eat them alone but I sometimes put a little balsamic vinegar or lemon juice on them and maybe some herbs and spices (and let them sort of 'marinade' in that for a while...)
I also make spaghetti with beet sauce fairly often (as tomatoes don't agree with me) - basically just tomato sauce with beets subbed in for the tomatoes (yum!)
I must admit that I don't think I've ever bought a fresh beet - it seems like so much work. My mom buys them though. Prep is pretty similar to a potato or carrot (as they're all root vegetables). I think you're supposed to cook them with the peels on though because they discolour quickly like sweet potatoes (losing nutrients too). Then you can boil them or sautee them; roasting them is good too - I'm sure you could even microwave too, like a potato. And of course there's borscht (my boyfriend's Ukranian grandmother makes THE best borscht!)
Well, there it is ... I'm craving beets now!

I know...I know. I didn't post my SFS supplements. Believe me, it's not intentional. I still can't eat much more than that most days. UG.

Do you use the beets as the sauce on the noodle all by itself? Or only use the juice? Also, I can't tell by reading the post, but it sounds like you add the juice to the tomato sauce and just not use the tomatoes in the sauce? Or am I reading this all wrong?

No I don't use tomatoes at all anymore. What I actually do is just put a can of beets in the blender (you could also use a food processor) with a bit of the juice so it gets the consistency of a tomato sauce and then simmer it on the stove with basil, oregano, garlic etc. while the noodles cook (i.e. just like you'd do with a canned spaghetti sauce).
It quite surprising how much it looks and tastes like tomato sauce, actually! AND it doesn't hurt my stomach (like tomatoes do for me, sadly). Ahhhh I love beets lol

Yes, beets are a divine! I like the canned baby ones too--not the pickled ones, though. Have you tried Nakano seasoned rice vinegar? It's also great splashed on beets! They're also really good with cinnamon and a little dijon mustard with a tad of vinegar for tang. Have you ever eaten too many!!! I have. Nature's candy. They are good roasted though. Just peel them afterwards and put on some rubber or latex gloves to avoid the axe murderess look.
