Doctors // Have I had all the right tests?

Hey all.
My GI has run the following tests to determine if I had IBS. I have had -sonogram of abdomen (to check for gallstones/gallbladder problems) -test of stool for bacteria, parasites, ova, and blood -blood test for Celiacs -upper GI series (barium x rays) -colonoscopy -endoscopy
I also had some bloodwork, but am not sure what information should have been in that specifically.
All of these came back negative (although apparently I am anemic, and they do not know why).
A second consultation with another GI concurred it was IBS, and he also did not believe I needed any additional tests.
My question are- Was something missed? What should be included in bloodwork before a diagnosis of IBS is given? And do I need to look for yet another gastroenterologist?
(I'm in NYC, so if anyone has a practitioner they like, please let me know)
