Does anyone else have trouble stabalising? I have followed Heather's diet for nearly 2 years and I just can't seem to break the cycle of attacks...

Have you been to a doctor and had ALL of the tests done? Two years is a long time.. even before the diet I would have blocks of time when life was bearable...
There is a list somewhere on this site (don't remember where) of all the tests you need done to rule out more serious problems- maybe you do not have IBS.
Also, some IBSers also have problem with gluten and need to cut that out of thier diet, but not many.
I think JenX and Kandee are gluten free, i am not sure who else is.

First, welcome to the board! Second, I'm sorry to hear that you haven't been able to stabilize yet. In addition to the suggestions above, have you doublechecked Heather's list of the Seven Sneaky IBS Sins??!! It's on the main site under the newsletter section I think.
