Please help Lunch ideas?

I'm new to this site, I'm not even sure how this all works;the board and so on... I'm looking for lunch ideas ,sandwiches etc... I don't have access to facilities;microwave,refrig,etc... I drive a van and I'm on the road everyday. Can Heather or anyone else please help me!!! PS: I don't like peanut butter.

Hi! A great lunch that you can bring is either turkey or chicken breast sandwiches on french or sourdough bread or in a wrap with a little mustard on them! (Try to keep away from mayo). If you can tolerate lettuce that add a little of that, with some veggie based cheese as well. Also, any form of baked tortilla chips or baked lays works, and perhaps some baggies of cereal that is safe would be good too!
A question that I have actually is whether or not tuna fish is ok for people with ibs. I never put mayo in mine because I hate it, I put tuna with celery and pickles cut up in little tiny peices, add a little celery salt and a dab of spicey brown mustard! is this ibs safe?

I ingest large amounts of canned tuna...Heather's recipe with the lemon juice and drop of oil and the fresh herbs is terrific... I like it this way better than with non-fat mayo which often has a weird aftertaste.

For others... be careful with celery as this is high in insoluble fibre and not much else. It's great if you can tolerate it Spicey!

I have tuna rolls with a little low fat mayo usually. But I also like smoked salmon and lemon, or poached salmon, as a treat. Houmous is a great sandwich filler (and usually quite easy to tolerate) - try with chicken, black pepper and lemon.
Pots of pasta or leftover risotto can also be great cold.
Rice cakes are great soluble fibre snacks (I really must go buy some!). And RKTs or ADBs are yummy as lunch-box snacks.

something, that I often make is large batches to last all week is potato and pasta salads. Don't use mayo, because its bad for ibs and if there is no refridgeration it may go bad..
To make pasta salad, I boil whatever pasta I have on hand, cut up tiny peices of carrots, red onions, green or red peppers, etc. basically any veggie I have on hand.. throw it all together, add some S+P, and fat free italian dressing and voila.. its done.
To make potato salad, I just boil potatos, add some cut up scallions and top with italian dressing or lemon juice and herbs. Neither of these recipes are hard, and you don't eat them hot so it sounds perfect for you.
