I'm Confused

Could someone just give me a quick idiots summary for something I have a question about? I know that you are supposed to have a soluble fiber food with every meal, and so I try and always have a roll or some rice or something with everything I eat, but I'm really trying to incorporate more veggies, and I'm confused because if I'm eating a soluble veggie (i.e. potato) do I still need a roll or something like that?
I think I've come to associate needing to have soluble fiber with my meals with needing to have carbs...which likely isn't the same thing
Sorry if this seems stupid, but I'm a girl who literally lived off fast food and prepackaged meals and am just so confused when it comes to cooking (and buying) food...but I'm learning!

Well, potatoes provide both soluble fibre AND carbs! I try and eat either potatoes, rice, bread, pasta or noodles with every MAIN meal. But any soluble fibre should do as your base...I'm getting a bit confused here. Help!
