Whole grains vs. refined flours

I have been doing better since eating according to Heather! Although I'm feeling better I still get frustrated on teh issue of whole grains vs. refined flours. I always ate whole wheat breads, pasta etc. and now I can't. It makes me angry b/c I keep reading article after article stating that whole grains protect agains heart diseas etc. while white flour etc. can lead to diabetes and don't have many health benefits. It drives me nuts when my husband and I go to subway for ex. and I get white bread and he gets wheat. it's like we have switched places. I miss teh whole grains. I'm curious as to what Heather has to say about this. I keep telling myself hey it's working (and I am so thankful for that) so let it go but I just wonder! Thanks!

Heather explains this better than I -- so I won't try -- just do a search because there are previous posts on this.
I too crave whole wheat bread. Last week I just O.D.'d on French, and this morning I just couldn't face another slice of the stuff. I pulled the whole wheat out of the freezer and popped a slice in the toaster.
BUT WAIT! Before I ate it, I had the acacia with my tea, and finished the entire cup. THEN I had my yummy slice of whole wheat -- and boy was it GOOD! I put some Soy Garden butter on it -- oh yummy -- and some of my fave blueberry jelly. Oh, BABY!
And -- NO tummy problems.

it isn't that you can't eat whole wheat or other whole grains. You probably can, and should definitely try. You just have to treat them as potential insoluble fiber triggers, so have in small amounts with a soluble fiber basis.
There are lots of whole grains more tolerable than whole wheat. Oatmeal and brown rice are usually quite tolerable for IBS folks, quinoa and polenta are options, buckwheat noodles are delicious, and rye bread can be tolerable too.
You could make regular pasta with about 1/4-1/3 of the pasta whole wheat - that would be a safe mix. Do the same with bread - if you make stuffing, make it mostly white bread but throw in some whole wheat. Add a handful of wheat germ or even bran flakes on top of cream of rice, rice chex, or corn chex cereal.
It's not just WHAT you eat, it's HOW you eat it.
Oh - and there is nothing in white flour that isn't also in whole wheat flour. The diff is that the bran and germ have been removed from white flour. There's a lot of nutrition there, so white flour is missing it. But it's not like junk is added to white flour - and white flour won't cause diabetes, or any other health problems. It's what white flour is missing that you need to make up for.

This just gave me an idea...I wonder how using 1 slice of white, and 1 slice of wheat for a sandwich would be.
Has anyone ever thought of or tried this...or am I just weird?

Hey Mags you are not weird!! When I'm having a pretty good day, I use 1 slice white and 1 slice 60 % whole wheat.I don't like 100 % whole wheat.( too gassy,and too heavy for my preference). I try and incorporate this at least 4-5 times a week. Sue

Bev... how do you stay excited about this all of the time? I have only been IBS diagnosed since 12-22 and am already rather burned out, but you always seem excited to be sharing with someone your experiences and recipes, etc. ?
