What machine is used to show this, and wondering why my doctors didn't use it? https://s-media-cache-ak0.pinimg.com/originals/9e/3c/22/9e3c22903a9ac1b25564258d975f120e.jpg

Hi- I don't know what machine they used, but I've only ever seen this image in the context of a research study. I don't think it's something docs would normally do for diagnosis.
I've also seen PET scans of brains of people who have IBS, and they look quite different than PET scans of people without IBS. I've only seen that in the context of research studies as well though.

Thank you. I would think it would be helpful to prove to Social Security Disability the legitimacy of the horrible stop-you-in-your-tracks pain one can experience.

If you are trying to do that you might contact the UNC motility clinic in Chapel Hill, NC directly - just google as they have their own website with tons of info and contact info. You might be able to just call them and ask what they would suggest for resources, help, etc. to prove your case.
You can also get hard core research abstracts from the NIH at pubmed.com - just search for IBS or irritable bowel and you'll find tons of helpful studies. Search for IBS and the author name too - Talley, Whitehead, Drossman, etc.
