cooked tomatoes ok or not??

i was reading and the book said that cooked tomatoes have more acidity to them and aren't good, but some of the recipes have cooked tomatoes or tomato sauce??????

Perhaps this article TOMATO PUREE AND SAUCE - too acidic for you? may be helpful. It talks about four factors that contribute to the natural acidity of a tomato sauce. The juice, peel and the seeds. And overcooking. It looks like the acidity is not as much of a problem if you restrict the cooking time. Cooking also release a phytochemical - lycopene -a powerful antioxidant that decreases cancer and heart-disease risk.
