I was wondering if anyone knew if pitted dates are OK? I have a recipe that calls for them but I'm not sure if I'd be OK with them or not since I don't normally eat them. Thanks!

I'm not sure about this recipe I have if there is enough soluble fiber or not and I was wondering if I could add some of the tummy fiber to give it some soluble fiber. Here's the recipe.

No-Bake Fudgy Snow Balls

15 pitted dates
2/3 cup unsweetened cocoa powder
1 cup whole roasted unsalted almonds
1 tbsp honey
2 tbsp water (or more if needed)
3 tbsp confectioners sugar

Add almonds to your food processor and pulse until ground. Add dates, cocoa powder, honey and water. Mix until it forms a sticky mass. If it seems to dry, add a little water, 1 tsp at a time. Wash hands and using damp hands measure 1 tbsp and roll into a ball with the dough. Set balls on parchment paper. Put confectioners sugar in a bowl. Roll balls in your hand and then roll in sugar.

What do you think? If I add tummy fiber to this recipe how much should I use?

The date bar recipe sounds really good too I may try those also. Thanks so much!

I would be cautious, but give these a try. There's going to be a decent amount of fat in there from the almonds, but they're also a good source of soluble fiber. So is the cocoa powder. Make sure the nuts are really finely ground, and the dates too.

I'd add 1-2 tablespoons of the Tummy Fiber.

Have one or two for dessert on a full stomach and see how you do. These sound delicious, by the way!
