I agree, I get so excited when I find anything new I can eat. Here are a few of the more unique dishes you may want to try:
-mango chicken or fish over rice
-steamed wanton filled with chicken carrots and chopped with a little bean sprouts and bok choy
-quesadillas with veggie shred cheese and finely chopped chicken sauteed onion spices and slight dab of salsa and soy sour cream
- tofu sauteed in soy, lots of curry, ginger, pepper and garlic, zucchini and carrots tossed up with rice noodles (if you can handle a little egg 3 eggs and one yolk sauteed in tofu pan leftovers), after plating sprinkle food with egg bean sprouts and lemon juice
-my quick meal: trader joes rice noodle soup and a morning star veggie burger

I hope you get more posts, I need more ideas too. I also just tried Haen daz ras/van frozen yogurt - wow so good.

Hi Emmasmom:

Just a couple of snacks I can think of:

Heat up a flour tortilla, spread with a scoop of applesauce and roll up. Or you can dip the tortilla in applesauce.

Either flour or corn tortilla heated and dipped in salsa.

You can make a spinach dip by taking thawed frozen spinach, wring out excess water, add mayo and different spices. Mix well.Use this as a spread or dip on bread, crackers, pretzels, whatever. I also use as a dip for baked tostidos.

If you like the fake crabmeat, dice this up, add mayo and chopped zuchinni and use as a spread. I also like to use the canned white chicken breast for this.

For the chicken wantons(you can do tofu too): Mix together ground chicken, bok choy, bean sprouts, mushrooms, scallions and shredded carrots, spice with white pepper, paprika, garlic, ginger and soy sauce. Cook together in pan. When cooked thoroughly set aside. Make a dish of egg and water mixed together. Take two wanton wrappers (i like double, you can try single also) and seal together with the egg wash. Place chicken mixture in middle and put egg mixture around edges and seal by bringing corner to corner and crimping and sealing it. When you get done all of them place in fridge for and hour.
About that time, boil some chicken stock, with some soy sauce and scallions and a dash of white pepper. Bring stock to a slight boil and add wanton and cook for about 7mins and enjoy.
Sorry, Its hard for me to write my recipes. Every time I make something its a bit different and it always a pinch of this or that, till i get what i like. I love to cook but always cook by taste or smell not measurements.
As for the TJ rice noodle soups I like the mushroom and spring onion but I use half the flavor pack and no oil.
Hope It was clear enough. If you need more info you can email me at giveluv2all@yahoo.com.
Take care
