I've never frozen fresh spinach - not sure how that would work. But that's probably exactly what frozen spinach from the store is, huh?
I like to cook some pasta, then saute some garlic and cut up (fresh) tomatoes and spinach until it's warm and soft, then combine it.
Too bad we can't eat parmesan cheese on top, huh?

Spinach risotto! Or add to egg whites for a yummy omelette. If you cook it first you can freeze it and then just add it in small amounts to dishes for some IF.

Hi Fen,
I tried this the other night and it was fantastic. DH LOVES tomato sauces and doesn't care for spinach so didn't know how this would go over. Not only did it look like it came from the kitchen of a gourmet restaurant, but he loved it. And so easy. Thanks.
