Hello everyone I wanted to know if persimmons are considered SF or IF. Also I bought some rice cakes w/ Maltose in them. Is this safe?

Maltose is basically pure glucose. It's a disaccharide made of two units of glucose. So yes, it should be safe.

It took a bit of searching to find information on persimmons. I located a source that compares IF and SF in persimmons and apples. Unfortunately, they don't specify the variety.

There is about twice as much SF and IF in an unpeeled persimmon compared to an unpeeled apple.

An apple has about 0.4 grams of IF and 0.4 gram of SF per 100 grams.
A persimmon has about 0.8 grams of IF and 0.8 grams of SF per 100 grams.

An apple contains about twice as much fructose as glucose (7.5 grams compared to 3 grams per serving)
An persimmon has about equal amounts of fructose and glucose (about 9 grams of each per serving)
