I know packaged lunchmeats are processed and contain preservatives but are lunchmeats freshly sliced in the deli safe?

Frequently preservatives are added to the meats that you finding in deli's too - for example nitrates and nitrites in smoked meats. You should ask the individual behind the counter to tell you what is contained in the meat before you purchase it.

Sometimes I make my own lunch meat. I just bake or broil some chicken breasts and once it's cool I slice it really thin. It's really tasty and you can season it with whatever you want. Just make sure your knife is pretty sharp. Of course, you can't get the slices quite as thin as in the deli section but that shouldn't matter if you use the meat for sandwiches.

I stick to deli turkey or chicken breast and don't seem to have a problem - it is a good way to add some protein. I haven't tried ham, salami, roast beef or any other deli meats because they are red meat and I don't dare!
