Hello all, I am new to this site. I have found a lot of great info here so thanks to everyone already! I just started taking the acacia fiber 2 days ago and also just started following the diet at the same time. I am working up to go to Disney world in a month and am VERY SCARED!! I just got over a severe attack (for me) which lasted a week. I was IBS C but seem to be IBS alternating currently. I am taking Digestive Advantage IBS pills, the fiber and am also trying St. Joh's Wort to help with stress and mood issues. I think the diet seems straight forward enough, but am going to be freaking out without cheese. My goal right now is to be able to function on a daily basis at work without having to go home early or not go in at all due to the cramping, bloating and gas! Does anyone have any really great tips to help with the diet? Is chicken, turkey and seafood (crab, shrimp, and scallops) all okay? I'm trying to figure out what is helping and what is not but as you all know it is hard!!

Chicken, turkey, and fish are fine. Stick with white meat. As for shellfish, it seems to vary from person to person. I can eat shrimp until I look like one but crab gives me all sorts of troubles. I know that others, though, can eat crab w/o problems.

Cheese: The bottom line here is that you will never find a cheese substitute that looks, smells, or tastes like dairy cheese. However, there are some subs that are very tasty. Veggie slices are okay (the pepper jack is good). Soy-Sation is my favorite. Tastes good, melts well, and is available in shreds and blocks. I sure do miss dairy cheese but it isn't worth the pain and discomfort.

Have you tried hypno? Acacia fiber?

If you haven't already, you may want to try the Break the Cycle diet for a couple days and then start adding foods back in.

Any good substitutes for mozzarella? I used to eat that on almost everything! I'm going to try the soy and rice substitutes for dairy and see how I like them.
I'm actually feeling pretty good for just starting the diet and fiber. I'm very nervous about adding things in though, my last serious attack made me in severe pain for 15 hours and then moderate pain for a week straight. I have not tried hypno, I literally just got off the Zelnorm 2 weeks ago and realized I needed help fast! I'm really hopeful that this diet can keep me relatively normal, the one problem I am having is that I am hungry all the time now. I don't eat a large portion any time but I am trying to eat snacks throughout the day. How does everyone else manage this with their jobs? I'm kind of self conscious of eating constantly at my desk!

Veggie mozzarella slices are okay. They have shreds, too.

Don't feel self conscious about eating throughout the day. If you're hungry, go right ahead and eat.

Keep in mind that this diet is a guideline that needs to be tweaked to you specifically and that it can take some time to stabilized your gut. Don't give up if you don't see results right away. You should see at least a bit of improvement though from pretty early on.

I'm new to the diet, too, and I used to eat lots of mozz every day, so I understand!

Right now I'm using "Lisanatti" brand Almond Mozzarella (found at the Vitamin Cottage). I don't know where else it is sold. It makes a good "fake" melted cheese sandwich on sourdough. I like to buy the fire-roasted sweet red peppers and put them in the pan while the bread is toasting and the cheese is melting---then top the sandwich with peppers and a bit of squeezed lemon juice.

Fakes me out pretty well. I like it better than soy or rice "cheeses" so far--it's not as rubbery as soy cheese. Try it.

Unfortunatley I live in a small town so finding these great substitutes is proving harder than I thought it would be. I found rice milk and soy ice cream, but have not found ANY subs for cheese. Thanks for the suggestions though! I'm still looking for a bigger health food store in bigger towns around us so hopefully I have luck with cheese there!

I do have a question that I need answered. I have the books and all but am still confused about rice. It says rice is one of the good things we should be able to eat when we can't eat anything. BUt what if the rice you have is whole grain rice? DOes that make it bad then, or at least harder to digest? I have been buying those microwaveable rice packages which taste great, but am concerned if they could cause issues due to whole grain. Same thing with Rice cakes, the kind I am finding are whole grain. Just kind of confused!

My understanding on the rice issue is white is the only "safe" rice. Brown rice is hard to digest & if you have gas issues, steer clear of it. I am an IBS-C & used to eat brown rice all of the time for the health value-switching to white rice was weird because you hear the traditional school of thought that's it "fattening". The diet does seem to be helping me with the gas & bloating-it's still there, just not as severe.

White rice is just fine. Be careful with any microwavable or Rice-a-Roni type things. They often have dairy and other problematic ingredients in them.
