I know that chocolate is a trigger for IBS suffers. My question is, why? What about chocolate makes it a trigger? Are certain types of chocolate "safe"?

Chocolate is problematic because of caffeine and because it is usually packaged with fat and often with dairy and/or egg yolks. (Think candy bars.) However there are a lot of chocolate recipes in the Recipe Index that use cocoa, less fat, no dairy, and no egg yolks. Also once you're stable you may find that you can tolerate a small amount of chocolate candy on a regular basis. If I remember correctly Heather says she has a little piece of chocolate every day and I know I can tolerate some provided I have some Soluble Fiber in me first.
