WHITE RICE - what's so soluble about that?

I eat certified organic white basmati rice. The nutritional label reads "0 fiber per serving"...which is 1 cup cooked or 1/4 cup dry. Okay. WHERE IS THE SOLUBLE FIBER in RICE? ![](/messageboards/ubbthreads/images/graemlins/confused.gif)
If I cook and drain the rice (to get the goopy starch off) after cooking / am I draining of fiber or just starch?

As far as I know, you are just rinsing off starch (and maybe a few minerals...) There was a discussion on this board recently about food labels and why some (not all) food companies sometimes don't consider soluble fiber REAL fiber. I believe Heather had a rant about it at one point. ![](/messageboards/ubbthreads/images/graemlins/wink.gif)

I can't post the text here because the underlines do not show. However if you go there and scroll down to Nutritional Panel info, you will see that only insoluble fiber is underlined and therefore required. So rarely is soluble fiber even taken into account. I have seen only one product listing both and that is Kashi's granola bars. So, we never really see what the SF is in products. Wish I know somewhere where you could look that up!!
