Rice is a biggie, and there are other grains to try as well. Health food stores sell non-wheat pasta. There are also other soluble fiber vegetables, such as sweet potatoes. Definitely try other foods on the soluble fiber foods list. Not being able to eat wheat and potatoes does not mean not being able to follow the diet.

Is it possible that you have allergies to these foods, without actually being celiac? I'm pretty sure that's possible. It's up to you if you want to go through allergy testing - or maybe you already have and this was a dumb suggestion, heh.

If you're not celiac and not allergic, and you've gone through all the other tests and ruled out ANYTHING else that could be wrong, it's possible that your system is just SO torn up right now that it can't digest even the safest foods. That happened to me - at my sickest, even crackers or plain rice cereal would trigger an attack. In that case, all you can do is keep eating the stuff, deal with the attacks as you can, and eventually (it might take weeks, or even months) your gut will calm down. I lived on Imodium for a couple months till my insides wised up.

Good luck!
