Since no one has mentioned it yet....smoked fish (trout, tuna, salmon) on a pumpernickel bagel. You can get fancy and add capers or lemon zest or some veggies, but I like it plain. Heather has a couple of recipes in EFI.

I get them from the fabulous New York Bagel and Bialy in Lincolnwood. They distribute to a bunch of different places (like Treasure Island), so you may want to ask around at local delis and grocery stores to see if you can get one. All my and my DH's relatives stock up when they visit Chicago!

Rye is pretty well-tolerated, and this bagel isn't real seedy/grainy. I know Heather talks about rye and pumpernickel in EFI, so you might want to check there for sure. She's the one who recommended a smoked trout on pumpernickel bagel...

here are the ingredients in a basic pumpernickel:

3/4 cup water -- plus 3 tablespoons
2 tablespoons molasses
1 tablespoon butter
2 tablespoons cocoa powder
3 tablespoons cornmeal
2 cups bread flour
1/4 cup rye flour
1/4 cup whole wheat flour
1 tablespoon dry milk
2 teaspoons active dry yeast


From my perspective if it is made without the dairy it would be safe... I use potato water instead of the milk to soften breads and oil instead of butter for the preservative quality...

I miss these. They don't have these in the south suburbs. I was addicted to NY bagel and bialy when I lived up in Park Ridge/Des Plaines area.

I'd still check around. The folks in Lincolnwood swore that they are not available in Oak Park, yet the Onion Roll deli on North Avenue stocks them!

FF turkey breast, with FF mayo, mustard and a small amount of lettuce. YUMMY!!! On white, of course!

I pack this almost every day for lunch at work with pretzels and water. (I do no lettuce on mine)I heat it in the microwave a little. Yummmy is right! I usually follow my sandwich with 1 little square of dark chocolate and a cup of peppermint tea
