I can't tolerate canned corn. Is there anyone who cannot eat corn but can eat canned cream corn? Just wondering if this would be a safe food for an unstable C person???
I would eat it with mashed potato as the SF (with some of the skin left on and a T of pureed lentils.
Thanks

I reckon this is going to be a very personal thing tolerance wise Beth. I can tolerate canned corn so not much use otherwise.

I would think from it's name that cream corn has dairy in it, whereas ordinary canned corn doesn't. The only difference between canned corn and corn on the cob is the solution they can it in, which I think for the most part is water. -Bob

I can't do sweet corn very well but can do creamed corn although I rarely get to eat it. I do believe it is easier.

Then name is deceiving! It is creamed with corn starch, water, and some sugar I think.
It's smoother than regular corn kernels....more "processed" or "puree type". I still puree it though!

Oh, I never knew that. They should change the name to corn starched sugary syrup corn. Of course that's too long . -Bob

Not even the creamed corn type? I'm suppose to have it for dinner tonight!

Heather has mentioned using creamed corn in some of her recipes, I think. I've been meaning to try it but have been afraid to do so because of the reaction I've had to regular corn in the past. If you do try it let me know!

I had Corn on the Cob last night, and felt terrible today. Is Corn on the Cob really this bad, I mean it felt like I had a Big Mac today, is it unsafe? I take it canned corn is fine to consume?

I really don't do well with corn, and I think corn on the cob is some of the worst, because I always eat it before its realllly done. Plus, the skin of corn is just sooo fiberous and doesn't break apart easily at all!
Don't know anything about creamed corn though

And for me it works well. I use the canned cream corn on potatoes, rice, chicken and whatever. Sort of like I would a gravy. It made life without gravy bearable!! I didn't eat it everyday but quite a few times a week, and maybe only a 1/2 cup at a sitting. Sometimes if I wasn't real stable (D) I would strain it to remove some of the fiber.

Corn on the cob I suppose is a major trigger then.

Except I take an extra precaution of putting the 1/2 cup of cream of corn in the food processor to be extra safe. I used to eat this as a gravy over mashed potato even when I was a little kid. Yum.
I would never touch kernel corn or corn on the cob though! Cream of corn is stretching it to the end of my comfort level!
