Please rank your most tolerated to least tolerated veggies to give ideas to newbies etc.

well tolerated...
potaoes sweet potatoes carrots artichokes asparagus green beens squash/zuchinni peppers tomatoes
pretty well tolerated...
onions spinach corn on the cob some lettuce avacados cauliflower broccoli mushrooms
Intolerable...
luckily not much! spinach, lettuce, in huge quantities

Super-well-tolerated (ie. I can eat them even when really unstable):
Carrots, well-cooked Peas Potatoes Sweet Potatoes Squash Spinach, well-cooked
Well-tolerated (with SF):
Carrots, raw Corn Spinach, raw Tomatoes, raw or cooked Mushrooms Onions Asparagus Brussels sprouts Lettuce Broccoli Cauliflower Cucumbers Olives (I know, they're really a fruit) Zucchini Pea pods Hot peppers (jalapenos, etc) Sprouts Bamboo shoots Water chestnuts ...and really just about everything else!
Intolerable:
Bell peppers of any color, raw or cooked Potato skins

From most tolerated to "okay in very small amounts":
mushrooms carrots sweet potatoes potatoes broccoli zucchini water chestnuts baby corn garlic bell peppers avocado (also on my fruit list) green beans edamame legumes (Are these vegetables or in their own category?) asparagus celery peas onions/shallots/leeks tomatoes baby spinach cauliflower cabbage
Least tolerated: brussel sprouts lettuce cucumber sprouts raw "anything"

Oh, I'm so glad I'm not the only who can't seem to eat a nibble of bell peppers. I can pretty much do everything else, but they just kill me. (so sad, my dad grows tons of beautiful ones in his garden too.)

Ditto. I just cannot tolerate them, raw or cooked. Salsa is even off limits! I can tolerate a small amount of chilis, though. Bizarre.

I tolerate veggies and IF pretty well. I just make sure to have SF first most of the time, but sometimes I nibble in the garden on an empty stomach. I think all veggies are acceptable for the most part and shouldn't be thought of as forbidden foods; except when you have certain vegetables that cannot be tolerated, such as cabbage. Most tolerated, coooked: all root veggies, if eaten slowly and not like a horse, raw carrots are fine too mushrooms spinach peas green beans zucchini creamed corn
Asparagus broccoli artichokes peppers leeks onions etc
corn niblets cauliflower tomatoes cucumbers raw bean sprouts and that kind of thing
least tolerated: lettuces especially iceberg, raw cabbage, regular not napa corn on the cob beans, dry (not really a vegetable)
That is all I can think of.

me and veggies have a hard time!! most need to be cooked and cooked well!
Easy tolerated: sweet potatoes squash (winter variety) carrots (raw and cooked) beets mushrooms potatoes
other veggies well cooked with SF: green/yellow beans summer squash/zucchini spinach tomato peeled cucucmber peppers peas lettuce(small amounts)
not tolerated well: broccoli cauliflower onions corn celery lima beans pea pods sprouts

Does the way you grouped your foods mean anything? Is the first group the easiest, the next set a little rougher, etc?
Your last group is the only one that says least tolerated...so I was wondering if there was any significance to the way you grouped your foods.
Do you puree all your veggies or eat them whole? I am in awe that you can eat brocolli. Maybe I shouldn't be so afraid to try some! How much can you eat of the veggies at once time? A normal serving size...like 3 1/2 to 4 oz?

Yes I was sort of segregating the groups and the most tolerated were first. I am still brain dead from being on vacation! I don't really puree at all and sometimes my veggies aren't cooked that long. I do just fine with IF for the most part. Broccoli doesn't seem to bother me. I can eat about a cup with rice or something and I am fine. I cut it out at first and then upped the amount to about a cup now. I eat huge qunatities of carrots and potatoes. Last night I had garden potatoes and carrots cooked with zucchini and cauliflower for dinner with 2 bites salmon. It was great. But everyone is different with tolerances, for me fat is the main problem.

Interesting notes re: iceburg lettuce and cabbage. I love iceburg, but I bloat intensely after it, sometimes! It's like walking around with a tummy full of water! I don't have a problem with spring mix or endives/chicories, leaf lettuce, boston lettuce, baby spinach, and most of the time romaine.
I find I can tolerate baby bok choy without a problem, as long as it's cooked until tender. Ditto for nappa. Red or green cabbage, though...HURTS!
I like your comment re: veggies being considered "forbidden foods!" Often I believe that there is a veggie paranoia on the board. They can be prepared/consumed quite safely on stable/good days! Lol! I can just imagine you nibbling in your garden!

I can tolerate more than a small amount of chilis. Heh. But even a bite of bell pepper, raw or cooked to death, will stay with me for days.

zucchini and other squashes
mushrooms
spinach and most other greens (chard, collard, kale) but ONLY if cooked and, most of the time, pureed too
peas
veggies (pretty well tolerated)...
green beans
chili peppers
garlic
asparagus
pickles
if I'm really stable I'm usually ok with broccoli, cauliflower, cabbage etc., but sometimes not
(there's definitely more to go on this list, i.e. everything else! I just can't think of any more veggies right now...lol!)
veggies (don't eat)...
onions
bell peppers
tomatoes
corn
ANYTHING RAW!

I think you'd love pureed cauliflower, a.k.a. "faux-tatoes." Pureed broccoli is really really good too (if you're stable, of course!). Shhhh...don't tell anyone! It's too easy to make "brocco-burgers" or cauliflower-patties with a few clever twists and turns! (I know you're moving toward veganism)

Oh I've been meaning to try those for so long now but my grocery store has been having only really yucky looking cauliflower for the past few weeks They shoud really good. I loooove making potato patty type things with mashed potatoes so I bet those would be good too! Thanks Kate!

I got the biggest head of cauliflower ever! I have been eating it for several days and there is still some left. I am sure it was over a foot across.

It's easier than meat-burgers! My grandmother makes cauliflower patties all the time. It's just mushed cauliflower as the main ingredient. She'll use egg-whites as a binder. Try cream of wheat or rice or bread crumbs or mashed potatoe to give it enough 'glue.' heck, even oats would work--that's what's in garden burgers. a few carrot slivers for colour? She puts peas in them, but uh...I pick them out as they offend me. lol! My store has these HUGE cauliflowers that look like they're on steroids and they are just so white...they look like big shampooed skulls! Hmmm...you could actually use soy in them as an adhesive...some herbs/spices to taste & a hint of vinegar and it would have a quasi-ricotta taste/texture. definite high protein casserole material! ooooohhhh...delightful with a side of popeye pesto or mock-tomatoe (carrot/beet) sauce! totally conducive to some chili sauce! a little dijon in the 'cauliflower bugers' would give it a nice mild bite.

Kate, you're making my mouth water Will *definitely* try these soon - I'm going shopping this weekend so I will do a little hunting for some edible looking "shampooed skulls" (ROTFL!!!! I second Casey in that that will change forever the way I look at cauliflower... lol!)

If organic, cooked, peeled (if peel exists) and de-seeded (if seeds exist), I can tolerate the following in the following order:
EASY (although with IBS you never know for sure!):
Potatoes Carrots lettuce Sweet potatoes/yams
MEDIUM TOLERANCE:
zucchini beets turnips mushrooms sweet red peppers celery
DIFFICULT (but tolerable in miniscule quantities):
brocolli Swiss chard onions (green onions are more tolerable than cooking onions) tomatoes squash cucumbers
VIRTUALLY IMPOSSIBLE (an emergency dept. visit will likely follow consumption!)
cauliflower cabbage beans, all types including green beans, chick peas (Americans call chick peas "garbanzo beans"!), lima beans, etc. pickles hot peppers corn kale kolrabi

It's amazing how much a food processor can make vegetables less terrifying/intimidating! I won't eat the stuff, though, unless it's been in the food processor!
Just had some 'green beans' for a snack and thought of you! I have a new concoction that I'll post on the recipe board.

TOTALLY agree re: food processing/blending. For a long time I was under the assumption that there were only a few vegetables I could ever safely eat - and then I started pureeing ones I thought were UNsafe for me - and, surprise surprise, totally safe. (Three cheers for my blender for reuniting me with greens and beans )

Can eat (all cooked):
carrot (especially in that awesome EZ chicken recipe) potato celery tomato (raw and cooked) - too much sets off the acid reflux green beans mushrooms
So far, I can't have:
peppers
I've had some broccoli once or twice and did ok with that too.
