If organic, cooked, peeled (if peel exists) and de-seeded (if seeds exist), I can tolerate the following in the following order:

EASY (although with IBS you never know for sure!):

Potatoes
Carrots
lettuce
Sweet potatoes/yams


MEDIUM TOLERANCE:

zucchini
beets
turnips
mushrooms
sweet red peppers
celery


DIFFICULT (but tolerable in miniscule quantities):

brocolli
Swiss chard
onions (green onions are more tolerable than cooking onions)
tomatoes
squash
cucumbers

VIRTUALLY IMPOSSIBLE (an emergency dept. visit will likely follow consumption!)

cauliflower
cabbage
beans, all types including green beans, chick peas (Americans call chick peas "garbanzo beans"!), lima beans, etc.
pickles
hot peppers
corn
kale
kolrabi

It's amazing how much a food processor can make vegetables less terrifying/intimidating! I won't eat the stuff, though, unless it's been in the food processor!

Just had some 'green beans' for a snack and thought of you! I have a new concoction that I'll post on the recipe board.

Oooh, I'll pop over to the recipe board right now and have a look...

TOTALLY agree re: food processing/blending. For a long time I was under the assumption that there were only a few vegetables I could ever safely eat - and then I started pureeing ones I thought were UNsafe for me - and, surprise surprise, totally safe. (Three cheers for my blender for reuniting me with greens and beans )

So far (still adding foods back to see what I can tolerate):

Can eat (all cooked):

carrot (especially in that awesome EZ chicken recipe)
potato
celery
tomato (raw and cooked) - too much sets off the acid reflux
green beans
mushrooms

So far, I can't have:

peppers

I've had some broccoli once or twice and did ok with that too.
