Laurel,

I feel for you...I really do. Mexican food plus my tummy equals a bad couple of days!

I think the most important thing to remember is not to be afraid to ask the waiter to make accomodations for you (i.e. order things without cheese, skip the salsa, etc.).
I think the salmon would probably be a good choice, but I might picked the steamed one over the seared one, just because it will probably be a little less fatty.
Portions at places like this are usually huge, and my biggest trigger is eating too much, so I would caution against going super hungry. In fact, perhaps you could have a little something before you go, and then just order a something like plain rice and black beans to munch on.
