Okay..so I went to the grocery store to stock up my pantry. I am STILL confused after reading Heather's book and reading all these messages. Many of the foods that I picked up that I thought were safe had "enriched wheat flour" as a main ingredient. Am I suppose to only shop for foods that contain "white flour???" The three different bags of pretzels that I picked up all contain "wheat flour"....crackers were the same, so were cookies and many of the "fresh" white breads/buns were baked with milk and eggs (I asked the lady in the bakery dep't). Has anyone tried the "Oats and Honey" bread? The Honey Maid graham wafers/crackers were also made with enriched wheat flour....To be truthful, I have eaten lots of the above foods in the last couple of weeks and had no problem (other than bloating)...I just don't want to continue if one day it will add up and give me a flare up...I appreciate the clarification....is it me...or are there always questions concerning "safe" foods..

What you want to be careful of when you're looking for foods to use as your soluble fiber base is flour that is indicated as "whole wheat flour". Even that isn't BAD for you, but it should be treated as an insoluble fiber food instead.
But everything you mentioned is safe, in terms of the flour content.

The same thing has troubled me this week when I went grocery shopping. I am also just newly starting to eat Heathers diet. It seems like just about everything has wheat in it. I have always been a health nut and chosen wheat over white foods so it is a change that I feel odd about making in my diet. And to what extent??? I am also confused about the so called "safe foods."

I am new to all this too...I was diagnosed about a month ago now...it does take some time to get it all straight..as you can see I am still questioning things....one thing I do know...I followed Heather's BTC diet for about one week...I felt so much better...I am still making sure to eat tons of SF during the day and before I eat...I too bought whole wheat breads and granola bars with lots of nuts and lots of fresh salads with market fresh veggies...my husband and I love dairy (cheese, ice cream, milk...) he continues to love it and I have, well, started to like soy. I have found a great chocolate soy drink (VitaSoy) and I have eaten the soy cheddar cheese (which is okay). We also are (as I continue to be) BIG desert people! There are some good recipes to make. I printed the "snacks, quick foods and good grub in a hurray" list from this message board and I keep it on hand when I grocery shop. Now I know I can buy "enriched wheat flour" products.

HI Casey, But what does 'enriched' wheat flour have that plain wheat flour doesn't? -Bob

Refined/white wheat means that the wheat has had the bran and germ. By removing the bran and germ you lose a lot of the vitamins and minerals found in wheat. So enriched wheat flour means that iron (and sometimes calcium) and vitamins are added back in.
HTH!

The bread you mentioned up there... if it contains milk and whole eggs, don't buy it. Really, I find I'm ok with the eggs, but milk is such a huge trigger for so many people that I wouldn't risk it.
I know this is contrary to Heather's advice, but it's more important sometimes to use common sense than to follow anything word for word... ALL of the bakery bread up here has milk in it, so I never, ever buy fresh bakery bread. I just buy plain ol' normal sliced sandwich bread like I always did. I don't know what brands you have there, but if you look for the Kosher marking "Parve" on the front of the package, you'll be getting something without dairy.
I'm not sure if that was your question, but I hope that helps a little anyway!

That makes things much clearer Casey! I know that the diet can be a very individual list, however, the more we share, the more we learn. I will try the regular sandwich bread and see. I am going to check the oats and honey brand too. I know I will get awfully bored of white toast real quick!
